Aqua Vitae Sydfyn was founded in 2005 as Denmark's first craft distillery with its focus on fruit brandies.
Karstens and Lene have always followed the philosophy of carrying out all work steps from the tree to the glass by themselves. Kartsen’s focus is centered around the old apple varieties of the North. Therefore, it is hard to find someone else who might be more familiar with the different flavors and uses of these rarities.
His success proves him right, because his apple brandy "Filippa" won 1st place at the Danish Økologisk Landsforenings fødevarekonbewerbence early on and the world’s top gastronomy, such as the Noma restaurant in Copenhagen, serve their high-quality distillates produced there.
In addition to his own organic fruit, he also offers his AROMAT Pot Still for contract distilling. Customers can have their fruit from their own tree upgraded to a high-quality distillate.
